port wine

Red

For Ibero’s red Port wine we use Georgian grape variety Saperavi. This variety has an ability to produce high amount of sugar. We start fermentation in stainless steel tanks and when about half of the natural sugar of the grape juice has been turned into alcohol by the fermentation, the wine maker gives the signal for the fortification process to start. As the fermenting wine pours into the vat, a very clean young wine brandy is added to it. The addition of the spirit raises the strength of the wine to a level where the yeasts responsible for fermentation can no longer survive. The fermentation stops before all the sugar in the juice has been turned into alcohol and some of the natural sweetness of the grape is thus preserved in the finished wine. After this stage we pour the wine into the oak barrels and age it for 5 years.

Tasting Notes

Deep ruby in colour, it has a potent nose of concentrated fruit, crammed with blackcurrant, plum and liquorice flavours. Its luscious texture is supported by a firm tannic structure giving the wine restrained elegance.
